Getting your cheese testing iron engraved is a lovely idea and may help its safe return if you should become separated.
To try your cheese, plough the iron into the cheese and twist. Exactly the same principle as an apple corer. Pull the iron out with a bore of cheese which displays a perfect cross section of the cheese from the inside out. Get a feel of the cheese between thumb and index finger. Smell the cheese and finally taste a small sample.
When you have finished analysing the cheese, replace the bore by reinserting the iron into the cheese. The point of entry should be virtually invisible.
