Description
Special matting provides extra support for larger wheels of soft cheeses on storage racks and shelving, such as Brie and Camembert or underneath large and small hard cheese moulds during pressing. Customers also line the shelves in cheese fridges, dedicated to storing white mould ripened cheese. Remember to store white and blue mould ripened cheeses separately, to avoid cross contamination.

For soft cheese we recommend covering the plastic mat with a milk filter paper before filling the mould with fresh curds to avoid sticking. Plastic matting may also be used to line maturing racks/shelves for hard cheese.
Matts may be sterilised using a weak solution of hypochlorite, rinsed and allowed to drip dry before and after use. Small pieces of matting maybe put in a dishwasher on an eco program, then sterilised by immersing in boiling water briefly, before use.
