Matting

Matting can be sterilised using a weak solution of hypochlorite. Use for soft cheeses on a draining rack with open- ended moulds, or underneath hard cheese moulds while in the press. When making soft cheese we recommend covering the plastic mat with a milk filter paper before filling the mould with fresh curds to avoid sticking. Plastic matting may also be used to line maturing racks/shelves for hard cheese.
